Cauliflower Rice Stir-Fry with Ground Pork and Bok Choy
Nutritional Information
Fast skillet stir-fry of grated cauliflower, ground pork and tender bok choy flavored with fresh ginger and garlic — no sauces, all whole ingredients for a keto-friendly meal.
This recipe is originally for 3 servings. How many are you cooking for today?
- 1 large head cauliflower (about 4 cups grated into rice)
- 1 lb ground pork (no additives)
- 2 cups bok choy, sliced
- 1 inch fresh ginger, minced
- 2 cloves garlic, minced
- 1 scallion thinly sliced (garnish)
- 1 pinch sea salt (optional)
Grate cauliflower on a box grater or pulse in a food processor to rice-sized pieces.
In a large skillet over medium-high heat, add ground pork. Break up and cook until browned and cooked through; the pork renders fat used for the dish.
Add garlic and ginger; cook 30 seconds until fragrant.
Add cauliflower rice and bok choy; stir-fry 4–6 minutes until vegetables are tender but still bright. Adjust seasoning lightly with salt if using and finish with scallions.
