This recipe is originally for 2 servings. How many are you cooking for today?
- 1 1/2 lbs cauliflower (cut into two 350 g steaks)
- 2 1/8 ozs walnuts, lightly crushed
- 3/4 oz fresh parsley
- 3/4 oz fresh cilantro
- 1 1/8 ozs fresh lemon juice
- 1/8 oz fresh garlic, minced
Preheat oven to 220°C (425°F). Slice cauliflower into 2–3 cm thick steaks.
Roast steaks on a sheet until edges caramelize and fork-tender, about 25–30 minutes.
While cauliflower roasts, chop walnuts, parsley and cilantro and combine with lemon juice and minced garlic to form a chunky salsa.
Top each cauliflower steak with the herb–walnut salsa and serve.
