Citrus-Grilled Mackerel over Zucchini Noodles
Nutritional Information
Flavorful, fatty mackerel grilled with lemon and served over spiralized zucchini. The fish provides most of the fats; zucchini keeps carbs low and fresh herbs add brightness.
This recipe is originally for 2 servings. How many are you cooking for today?
- 12 ozs fresh mackerel fillets (split into 2 portions)
- 3 cups zucchini noodles (spiralized)
- 1 each orange (zest and a little juice)
- 1 tablespoon fresh cilantro, chopped
- 1 clove garlic, minced
- 1/4 teaspoon sea salt (optional)
- 1/4 teaspoon black pepper
Preheat a grill pan over medium-high heat. Pat mackerel dry; season with salt, pepper and orange zest.
Grill mackerel 3–4 minutes per side until cooked through and slightly charred. Remove and rest 2–3 minutes.
Toss zucchini noodles in a wide skillet over medium heat just to warm and soften, 1–2 minutes (no added oil); add minced garlic in the last 30 seconds.
Divide zucchini noodles between plates, top with grilled mackerel, finish with a squeeze of orange juice and sprinkle with cilantro. Serve immediately.
