Herbed Lamb Chops with Roasted Broccoli and Toasted Almonds
Nutritional Information
Simple roasted lamb chops seasoned with fresh herbs paired with whole-food roasted broccoli and toasted raw almonds for crunch. No processed ingredients, minimal added fats.
This recipe is originally for 1 servings. How many are you cooking for today?
- 2 pieces lamb chops (approx. 170 g total)
- 7 ozs broccoli florets
- 3/4 oz raw almonds (roughly chopped)
- 1 tablespoon fresh rosemary (chopped)
- 1 clove garlic (smashed)
- 1 wedge lemon (for serving)
Preheat oven to 200°C (400°F). Toss broccoli florets in a bowl (no oil) and spread on a baking sheet so they roast rather than steam. Add smashed garlic among florets.
Place lamb chops on a separate tray, sprinkle with chopped rosemary and press gently to adhere.
Roast lamb chops 10–12 minutes (depending on thickness) for medium or until desired doneness. Roast broccoli 12–15 minutes until edges brown and tender.
While still warm, scatter chopped raw almonds over roasted broccoli for a light toasted bite. Serve lamb chops alongside broccoli and a squeeze of lemon.
