Seared Salmon with Avocado Tomato Salsa
Nutritional Information
Pan-seared salmon fillets served with a fresh avocado, cherry tomato and lime salsa. All whole foods, no processed ingredients; healthy omega-3s and avocado fats make this strongly keto-friendly.
This recipe is originally for 2 servings. How many are you cooking for today?
- 2 fillets (~170g each)s fresh salmon, skin on
- 1 whole ripe avocado
- 8 pieces cherry tomatoes, halved
- 1 cup finely chopped red onion
- 1 tablespoon fresh chopped cilantro
- 1 whole lime, juiced
- 1 sprig fresh thyme (optional)
Pat salmon dry. Heat a heavy skillet over medium-high heat until hot. Place salmon skin-side down and sear using the fish’s own fat; cook until skin is crisp and flesh is opaque to desired doneness (about 4–6 minutes per side depending on thickness).
While salmon cooks, dice avocado and combine with halved cherry tomatoes, chopped red onion, cilantro and lime juice. Toss gently.
Serve salmon topped with avocado-tomato salsa and a sprig of thyme.
