Steak Salad with Arugula, Mushrooms & Walnuts
Nutritional Information
A hearty, whole-food salad featuring a simply seared steak, peppery arugula, sautéed mushrooms, and crunchy walnuts. No processed dressings — lemon and meat juices provide flavor.
This recipe is originally for 1 servings. How many are you cooking for today?
- 6 ozs grass-fed sirloin steak
- 2 cups fresh arugula
- 1 cup cremini mushrooms, sliced
- 1 cup raw walnuts, roughly chopped
- 1 tablespoon fresh lemon juice
- 1 teaspoon fresh rosemary, chopped
Bring steak to room temperature and season with rosemary. In a hot skillet, sear steak 3–4 minutes per side for medium-rare (no added oil required); rest 5 minutes and slice thinly.
In the same skillet, add mushrooms and sauté briefly in the steak’s pan juices until tender.
On a bed of arugula, arrange sliced steak, mushrooms, and sprinkle walnuts. Drizzle lemon juice over everything and toss lightly.
Serve immediately while steak is warm.
