Fresh zucchini spirals tossed with simply cooked wild shrimp, garlic, cherry tomatoes, and basil — a light, whole-food keto lunch or quick meal with virtually no added fat.

This recipe is originally for 2 servings. How many are you cooking for today?

Ingredients
  • 2 mediums zucchini (spiralized)
  • 10 ozs wild shrimp, peeled and deveined
  • 10 pieces cherry tomatoes, halved
  • 2 cloves garlic, thinly sliced
  • 1/4 cup fresh basil leaves, torn
  • 1 whole lemon (zested and a squeeze of juice)
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
Instructions
1

Pat shrimp dry. In a hot skillet, add shrimp and cook 1–2 minutes per side until opaque. Remove and set aside. (Shrimp cook quickly and release moisture to cook without added oils.)

2

In the same skillet add garlic and briefly warm until fragrant (watch closely to avoid burning). Add cherry tomatoes and zucchini noodles and toss until zucchini is just tender, 2–3 minutes.

3

Return shrimp to the skillet, add lemon zest and juice, basil, salt, and pepper. Toss and serve immediately.
