Nutritional Information
Light zucchini noodles tossed with pan-browned ground lamb, garlic, lemon and fresh mint. Rich in healthy fats from lamb and strictly whole-food ingredients for a keto-friendly, low-carb plate.
This recipe is originally for 3 servings. How many are you cooking for today?
- 1 lb ground lamb (85% lean)
- 3 mediums zucchini, spiralized (about 4 cups noodles)
- 2 cloves garlic, minced
- 1 tablespoon fresh mint, chopped
- 1 lemon, zested and juiced
- 1 teaspoon ground cumin
- 1 pinch sea salt
In a large skillet over medium-high heat, brown the ground lamb, breaking it up with a spoon. Cook until caramelized and cooked through, about 8–10 minutes. Add cumin and garlic in the last 2 minutes.
Remove excess rendered fat if desired (leave a small amount to flavor). Stir in lemon zest and juice.
Add zucchini noodles to the skillet and toss 2–3 minutes until warmed and slightly softened. Mix in chopped mint and season with salt.
Serve immediately, garnished with extra mint.
