Zucchini Noodles with Walnut-Basil Sauce & Shrimp
Nutritional Information
Spiralized zucchini tossed with a simple walnut-and-basil blend and seared shrimp—a fresh, whole-food keto plate using nuts for richness instead of oils or cheeses.
This recipe is originally for 2 servings. How many are you cooking for today?
- 10 5/8 ozs raw shrimp, peeled and deveined
- 14 1/8 ozs zucchini (to spiralize into noodles)
- 2 1/8 ozs walnuts, hulled
- 1 1/8 ozs fresh basil leaves
- 1 clove garlic
- 1 tablespoon fresh lemon juice
Pulse walnuts, basil, and garlic in a mortar or finely chop together; mix with lemon juice to form a coarse sauce.
Spiralize zucchini into noodles and set aside.
Sear shrimp in a hot skillet until opaque, 2–3 minutes per side.
Toss zucchini noodles with the walnut-basil sauce just to warm (1–2 minutes) and top with shrimp.
Serve immediately, garnished with extra basil if desired.
